A Spoonful of Christmas: Stuffed Olives

Dsc06525Well, this Thanksgiving I decided to stuff my own.  I bought a small container of kalamatas, some feta cheese, and a pretty jar.  I crumbled the feta up, and, well, I stuffed.  It's a little messy, but not complicated.  I put the olives and the brine they came in in the jar, and topped it off with enough water to cover the olives, a pinch of extra salt, and a tiny shot of olive oil.  Shake the jar a little to mix it all up, and you're good to go.  (And really you could do this with any kind of olive and just about any kind of cheese--I think next time I may do some pretty green Sicilians with blue cheese instead.) 

The verdict?  Short-lived!  ;)
