Not that bacon-and-cheese wrapped food is a novel idea, but just because it's not groundbreaking doesn't mean you shouldn't do it.
This particular version of bacon-and-cheese wrapped food originated because I really wanted some prosciutto wrapped peaches. But it's not peach season yet, so I pinch hit some plums.
You guys, they were good. I think better than the peaches, even. Less cloyingly sweet and with a pleasingly firmer texture. And so easy to put together that I'm not even going to trouble you with a "recipe", just a basic method.
Start with about 3 ounces of cheese, 3 ounces of prosciutto, and 3 plums.
Cut the plums and mozzarella into similar length slices; cut the prosciutto in half, lengthwise.
Then, use the prosciutto as a wrap to secure the plums and moz together in little bundles, skewering with toothpicks to hold it all together.
(You'll have some extra plum slices, but that works well for us because my heathen son likes them plain.)
Pop them in a grill basket until the prosciutto is going crispy and the moz is gooey.
Then, pop them in your mouth!
