As often happens with these blog-y type projects, I've fallen behind, so this is going to be more like the CSA treatise than a diary. But, gotta catch up sometime; here we go.
For the week of June 26th
Chinese cabbage :: A batch of kimchi, which sadly failed when it (I think) got too hot while we were gone over the 4th of July.
Carrots :: Some went into the kimchi. *Sad face.* But I somehow convinced the Kid that the rest were dessert one night. *Win face.*
Chard :: My first attempt at "kale" chips. They were a little over-crispy, but they tasted good.
Fava beans :: Went into this yummy potato salad.
Baby beets :: Went into this yummy beet and pretty flower salad.
Half pound of goat meat :: Drunken goat tacos!
For the week of June 30th (our pickup schedule was altered around the 4th):
Chinese cabbage :: Again, this went to kimchi that went bad while we were gone. (I swear it wasn't just a little mold, it was a whole city of it.)
Carrots :: These made a nice car snack for the Kid, and I used the tops to make pesto. (Something like this one.)
Fennel :: I used this (along with another bulb of fennel I had knocking around in the fridge) to make fennel confit, which I froze for later use. It smelled incredible! (Recipe from Put 'Em Up.)
4 baby beets :: My first attempt at beet chips. OMG they're so good. They're like roasted marshmallows, but good for you.
2 tomatoes :: These went to a little egg and avocado toast and to a tossed together caprese-style appetizer. (Pictured below.)
Potatoes :: This mustard-y potato salad--simple, but good.
For the week of July 10th:
1 large beet :: More beet chips, couldn't help myself.
6 eggs :: I can't keep track of eggs. They fly out of the fridge so fast.
2 large tomatoes :: This fresh pomodoro spaghetti sauce.
2 bulbs of garlic :: Again, garlic is something we use too fast to keep track of.
Red potatoes :: Yet another potato salad, or that's what I have down. For the life of me I can't remember the specific recipe.
Cucumbers :: This cucumber and mint salad, which we've made a few times now. Very cool and satisfying for these hot July days.
1 head purple cabbage :: A batch'o'kraut.
For the week of July 17th:
Blackberries :: A trial run of my own recipe for something similar to this blackberry gastrique.
Mint :: Mojitos! (What else do you do with mint? No seriously, tell me.)
5 ears of corn :: Grilled corn on the cob with butter and salt. There's a reason this is classic summer fare.
4 tomatoes :: More pomodoro. From Little Miss on up, the whole family loves this sauce.
1 long cucumber :: Some Greek-esque tacos with homemade tortillas, hummus, and our very own cherry tomatoes.
Potatoes :: Sunday morning hashbrowns.
Whew! OK, there you go. What are you all making from your CSA goodies?
