I dug up the last of our tiny baby carrots last weekend. There were so few--and they were so little--that there wasn't much to do with them.
But I had a little brine left in the bottom of a jar of store-bought pickles, so I decided to re-use it to make a wee jar of carrot pickles.
To do so, I trimmed the carrots to fit in a jar, boiled the brine, and poured it over the carrots. Then I let them sit in the fridge overnight before trying them.
You can't can pickles when they're made this way--so you need to refrigerate them and consume them within a few weeks--but it's a quick way to enjoyably deal with a really small bit of produce that might otherwise go to waste.
