"I always think I don't really like salad for dinner, but I like planned salad," quoth Sweet Husband, one evening a few weeks ago.
It's true. When I toss together a side-salad from what-do-we-have-in-the-fridge at the last minute it's OK, but when a special salad recipe gets worked out ahead of time with some thought as to flavors and dressing and such...well that, my friends, counts as a real-deal dinner!
To kick off summer, here are some of my all time favorite "planned" salads.
Grilled Peach Salad with Buffalo Mozzarella and Arugula :: Because grilled peaches!
Classic Cobb Salad :: Don't underestimate the classics! The protein in this one makes it super filling.
Melon and Prosciutto Salad :: This is my favorite when it's too hot to even exist in the kitchen.
Roasted Carrot and Avocado Salad :: I love the caramelized carrots in this one.
The Easiest, Sexiest Salad in the World :: The figs make this one a treat. We have it a lot on Friday nights as a bit of a celebration.
Roasted Beets with Pistachios, Herbs, and Orange :: I know beets are a controversial veggie, but the acidity of the orange goes nicely with them.
Obsessively Good Avocado and Cucumber Salad :: It feels like every food blogger is making this one this summer. There's a reason for that!
Insalata di Strada (Italian Street Potato Salad) :: Delicious if you have some potatoes coming at you from your farmer's market or garden.
Carrot Salad with Cilantro and Cinnamon :: The Kid and Sweet Husband were if-y on this one, but I really liked the way the cinnamon dances together with the grated carrots.
Asparagus with Lemon and Parmesan :: Just in case you have a few stalks sneaking in at your market, this is my new favorite for asparagus.
Apricot and Chicken Salad with Toasted Cumin Vinaigrette :: Pictured above, this is from a new-ish book called Vibrant Food. The whole book is worth checking out, but this was one of my favorites from it.
