I got on a roll--sometimes my hands need to knit--and whipped out the Kid's sweater pretty quickly. It's Flax, by Tin Can Knits.
While it's true that I was motivated, I also attribute part of the speed to how well the pattern was written. If you're a beginner, I can't recommend the Tin Can patterns highly enough, especially their "Simple Collection". The patterns are easy, but still interesting.
Like this one. It's just a basic raglan sweater, but the little garter detail on the arms keeps it from being boring. Love!
Next up, a sweater that will take me far longer than a week, I fear. My postpartum body hasn't settled into a size yet, so I'm skipping ahead to Sweet Husband. He's picked Brownstone by Brooklyn Tweed. The gauge swatches are giving me fits, but it will be a very nice looking sweater if I can battle it out!
