Because Soba Noodles Are Very Good

For the noodles:

  • About half a package of soba (buckwheat) noodles
  • 1 diced jalapeno or Serrano pepper
  • 1 diced Hungarian wax pepper
  • 1 bell pepper, cut into matchsticks
  • a handful of radishes (maybe 8 or so), cut into matchsticks
  • about 4 diced scallions
  • 1 cucumber, sliced thinly

For the dressing:

  • juice of 1 lime
  • 2 tablespoons olive oil
  • 1 tablespoon sesame seed oil
  • 1 tablespoon soy sauce
  • 2 tablespoons minced ginger
  • 1 clove of garlic, also minced
  • a handful of diced cilantro

For the steak:

  • 1 8oz rib-eye or other steak of your choice
  • 1 tablespoon coriander
  • 1 tablespoon dried rosemary
  • 1/2 tablespoon oregano
  • salt and pepper


Boil and drain the noodles, and rinse in cold water.  Mix the dressing ingredients in a small jam jar and shake to combine.  In a large bowl toss the veggies, noodles, and dressing.  Divide into portions, and mound onto plates.  (We usually divide the noodles into 4 portions, and save two for the next day's lunch.)

Meanwhile, using a mortar and pestle or similar, crush the herbs into a powder and rub them on both sides of the steak.  Sear the steak in a hot, dry pan and cook to your desired level of doneness.  After letting the meat rest a few minutes, slice thinly, and put half on each portion of noodles.  Top with additional soy sauce and/or sesame seed oil if you like.
