Today's "Week With the Contessa" recipe is French String Beans.
Over the past few weeks I've been watching old episodes of "The French Chef", i.e. Julia Child's first cooking show. In addition to being immensely entertaining, they're a bit of a study in food anthropology. If you've ever watched Food Network at all, you can just sit and pick out the techniques that the modern chefs are still using. Terribly enlightening.
But, in any event, in one of the episodes, Julia does green beans. Other than the fact that Ina added roasted onions and peppers, the two recipes are exactly the same. The moral? Green beans are green beans...although, given the choice, I must admit I prefer Julia's more simple preparation.
